We hope you have enjoyed the various recipes our Women’s Ministry Leadership Team has shared the past few months. Like many of you, the time of quarantine allowed us—or caused us—to have more time in the kitchen. Now that life is opening up again, our kitchen time will probably decrease, yet we wanted to take one more month to share a few favorites.
Grama’s Apple Roll
Here’s a super sweet (as in sugary sweet) twist on the traditional apple pie for your summer celebrations.
- 8 apples finely sliced
- 2 cups flour
- 2 tsp baking powder
- ½ cup sugar, 1 cup sugar (or substitute with Swerve)
- 1 ½ Tbsp shortening
- Pinch of salt
- 1 tbsp. cinnamon (or desired amount)
Mix flour, baking powder, sugar, shortening and salt with enough milk to be able to create a dough (not too sticky). Roll dough on a floured surface to ½ inch thickness. Put sliced apples over dough and sprinkle with sugar and cinnamon. Fold sides of dough up over the apples to create a roll or loaf, pinching it together at the top center. Put 2 cups water and 1 cup sugar in an oblong baking pan, stir. Gently lift the apple roll into the baking pan. Bake at 350° for 30-45 minutes.
Strawberry Delight Salad
- 2 cups hot water
- 2 packages red gelatin (strawberry, strawberry/banana, regular or sugar-free)
- 2 packages (10 oz each) frozen strawberries
- 1 can crushed pineapple (drained)
- 2 bananas, mashed
- ½ large carton sour cream
Dissolve gelatin in hot water. Add frozen berries (do not thaw berries). Add drained pineapple and mashed banana. Put ½ of this gelatin mixture into a 9 x 13 pan. Place this in the refrigerator for 30 minutes. Remove, spread sour cream on top. Pour remaining mixture over sour cream. Chill for 2 hours before serving.
